The inspiration for these no-bake cheesecake bites came to me one day when I was craving something sweet but didn't want to eat anything too unhealthy. I had some Greek yogurt in the fridge, and I thought about making a cheesecake with it. But I didn't want to use any cream cheese, and I wanted to make sure the cheesecake was gluten-free. So I started experimenting with different ingredients, and I finally came up with this recipe. These bites are the perfect balance of sweet and tart, and they're so easy to make. I love that they're gluten-free and dairy-free, and I always feel good about eating them.
