Ingredients
  • 1 cup unsweetened cocoa powder
  • 1/2 cup + 2 tablespoons coconut oil, divided
  • 1/4 cup stevia powder
  • 1 tablespoon pure vanilla extract
  • 1 cup almond flour
  • 1/4 teaspoon sea salt
  • 1 tablespoon finely chopped almonds
Instructions
  1. Line a 12-count muffin tin with paper liners.
  2. In a medium bowl, whisk together the cocoa powder, 1/2 cup of the coconut oil, the stevia, and the vanilla extract until smooth.
  3. Stir in the almond flour and sea salt until well combined.
  4. Roll the mixture into 12 balls and place them in the prepared muffin tin.
  5. Refrigerate the truffles for at least 2 hours, or overnight.
  6. Melt the remaining 2 tablespoons of coconut oil in a small bowl.
  7. Dip the truffles in the melted coconut oil, then roll them in the chopped almonds.
  8. Return the truffles to the refrigerator for at least 30 minutes before serving.
