Sugar-Free Chocolate Truffles

Ingredients
- 1 cup unsweetened cocoa powder
- 1/2 cup + 2 tablespoons coconut oil, divided
- 1/4 cup stevia powder
- 1 tablespoon pure vanilla extract
- 1 cup almond flour
- 1/4 teaspoon sea salt
- 1 tablespoon finely chopped almonds
Instructions
- Line a 12-count muffin tin with paper liners.
- In a medium bowl, whisk together the cocoa powder, 1/2 cup of the coconut oil, the stevia, and the vanilla extract until smooth.
- Stir in the almond flour and sea salt until well combined.
- Roll the mixture into 12 balls and place them in the prepared muffin tin.
- Refrigerate the truffles for at least 2 hours, or overnight.
- Melt the remaining 2 tablespoons of coconut oil in a small bowl.
- Dip the truffles in the melted coconut oil, then roll them in the chopped almonds.
- Return the truffles to the refrigerator for at least 30 minutes before serving.
