Creamy Cauliflower Steaks with Roasted Peppers and Onions

Ingredients
1 large head of cauliflower, cut into 1-inch thick steaks
1 tablespoon olive oil
1 red bell pepper, sliced into strips
1 yellow onion, sliced into thin wedges
1/2 cup vegetable broth
1/4 cup light cream
1/4 cup grated Parmesan cheese
1 clove garlic, minced
1/4 teaspoon dried thyme
1/4 teaspoon salt and black pepper, to taste
Instructions
Preheat oven to 425°F (220°C).
Toss the cauliflower steaks, bell pepper, and onion with olive oil, salt, and pepper.
Spread the vegetables in a single layer on a baking sheet.
Roast in the preheated oven for 20-25 minutes, or until tender and slightly browned.
While the vegetables are roasting, prepare the sauce by heating the vegetable broth, light cream, Parmesan cheese, garlic, and thyme in a saucepan over medium heat.
Bring to a simmer and cook for 5 minutes, stirring occasionally.
Pour the sauce over the roasted vegetables and serve immediately.
