Ingredients
  • 1 large head of cauliflower, cut into 1-inch thick steaks
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced into strips
  • 1 yellow onion, sliced into thin wedges
  • 1/2 cup vegetable broth
  • 1/4 cup light cream
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon salt and black pepper, to taste
Instructions
  1. Preheat oven to 425°F (220°C).
  2. Toss the cauliflower steaks, bell pepper, and onion with olive oil, salt, and pepper.
  3. Spread the vegetables in a single layer on a baking sheet.
  4. Roast in the preheated oven for 20-25 minutes, or until tender and slightly browned.
  5. While the vegetables are roasting, prepare the sauce by heating the vegetable broth, light cream, Parmesan cheese, garlic, and thyme in a saucepan over medium heat.
  6. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  7. Pour the sauce over the roasted vegetables and serve immediately.
