The inspiration for this recipe came to me one day when I was browsing the farmers market. I saw some beautiful fresh figs and I knew I wanted to use them in a recipe. I also had some leftover balsamic vinegar from a previous recipe, so I decided to combine the two ingredients and see what happened. The result was this delicious Grilled Swordfish with Balsamic-Fig Glaze. The first time I made this dish, I used fresh figs. However, I found that dried figs worked even better. Dried figs are sweeter and they have a more concentrated flavor. They also hold their shape better when they are grilled.I also experimented with different types of vinegar. I tried white wine vinegar, red wine vinegar, and apple cider vinegar. I found that balsamic vinegar had the best flavor. It is sweet and tangy, and it pairs well with the figs and the swordfish. The honey in the glaze helps to balance out the acidity of the vinegar. It also adds a touch of sweetness to the glaze.I like to serve this dish with a side of grilled vegetables or rice. It is also good with a simple green salad.
