In the annals of culinary history, the humble cod has long been relegated to the realm of bland and boring fish. But this recipe, with its vibrant tomato-basil sauce and medley of roasted vegetables, is here to change all that. The inspiration for this dish came to me one fateful night as I was rummaging through my refrigerator, desperate for something quick and easy to cook. I stumbled upon a forgotten container of cod fillets and a handful of sad-looking vegetables. With a few pantry staples and a dash of creativity, I cobbled together this dish, and to my surprise, it turned out to be one of the most delicious and satisfying meals I'd had in a long time. Since then, this recipe has become a go-to in my kitchen, and I'm excited to share it with you today.
Prep time: 15 | Cook time: 20 | Serves: 4
Ingredients
1 pound cod fillets
1 cup chopped tomatoes
1/2 cup chopped basil
1 tablespoon olive oil
1 teaspoon minced garlic
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup chopped zucchini
1/2 cup chopped broccoli
1/2 cup chopped red bell pepper
Instructions
Preheat oven to 400 degrees F (200 degrees C).
Line a baking sheet with parchment paper.
In a large bowl, combine the cod fillets, tomatoes, basil, olive oil, garlic, salt, and pepper.
Toss to coat.
Place the cod fillets on the prepared baking sheet.
Add the zucchini, broccoli, and red bell pepper to the bowl and toss to coat with the remaining marinade.
Spread the vegetables around the cod fillets on the baking sheet.
Bake for 15-20 minutes, or until the cod is cooked through and the vegetables are tender.
Serve immediately.
Why It Works
The tomato-basil sauce adds a bright and tangy flavor to the cod, while the roasted vegetables bring a touch of sweetness and earthiness.
Baking the cod in the oven ensures that it cooks evenly and remains moist and flaky.
Roasting the vegetables in the same pan as the cod allows them to absorb the delicious flavors of the sauce.
