This recipe was inspired by a trip I took to the Mediterranean coast of Spain. I was staying in a small village called CadaquƩs, which is known for its beautiful beaches and its delicious seafood. One night, I had dinner at a local restaurant and ordered a dish of grilled shrimp with zucchini and squash. The shrimp was perfectly cooked and the vegetables were tender and flavorful. I was so impressed with the dish that I decided to recreate it at home.

Why It Works
  • The marinade helps to flavor the shrimp and keep it moist during grilling.
  • Grilling the shrimp over high heat creates a nice sear on the outside while keeping the inside tender.
  • Grilling the zucchini and squash until slightly charred adds a smoky flavor to the dish.
  • The lemon juice and parsley add a bright and fresh flavor to the finished dish.
