Ingredients
  • 1 pound halibut fillets
  • 1/2 cup olive oil
  • 2 lemons, zested and juiced
  • 1 tablespoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 red bell pepper, roasted and diced
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh parsley
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a large bowl, combine the olive oil, lemon zest and juice, oregano, garlic powder, salt, and pepper. Whisk to combine.
  3. Add the halibut fillets to the bowl and turn to coat in the marinade.
  4. Transfer the halibut fillets to a baking dish and bake for 15-20 minutes, or until cooked through.
  5. While the halibut is baking, make the roasted red pepper relish. Combine the roasted red pepper, basil, parsley, and olive oil in a small bowl. Season with salt and pepper to taste.
  6. Serve the baked halibut with the roasted red pepper relish.
