Ingredients
  • 1 pound tilapia fillets, skinless and boneless
  • 1 tablespoon extra virgin olive oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes
  • 1/2 cup chopped fresh basil
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon ground black pepper
  • 1/4 cup chicken broth
Instructions
  1. Season the tilapia fillets with salt and pepper.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the tilapia fillets to the skillet and cook for 3-4 minutes per side, or until cooked through.
  4. Remove the tilapia from the skillet and set aside.
  5. Add the onion, garlic, and tomatoes to the skillet.
  6. Cook for 5-7 minutes, or until the vegetables are softened.
  7. Add the chicken broth, basil, salt, and pepper to the skillet.
  8. Bring to a simmer and cook for 5 minutes, or until the sauce has thickened.
  9. Return the tilapia fillets to the skillet and spoon the sauce over the top.
  10. Serve immediately.
