Ingredients
1 pound tilapia fillets, skinless and boneless
1 tablespoon extra virgin olive oil
1/2 cup chopped onion
2 cloves garlic, minced
1 cup diced tomatoes
1/2 cup chopped fresh basil
1/4 teaspoon salt, or to taste
1/4 teaspoon ground black pepper
1/4 cup chicken broth
Instructions
Season the tilapia fillets with salt and pepper.
Heat the olive oil in a large skillet over medium heat.
Add the tilapia fillets to the skillet and cook for 3-4 minutes per side, or until cooked through.
Remove the tilapia from the skillet and set aside.
Add the onion, garlic, and tomatoes to the skillet.
Cook for 5-7 minutes, or until the vegetables are softened.
Add the chicken broth, basil, salt, and pepper to the skillet.
Bring to a simmer and cook for 5 minutes, or until the sauce has thickened.
Return the tilapia fillets to the skillet and spoon the sauce over the top.
