Dijon-Mustard Chicken Thighs with Roasted Sweet Potatoes
Dijon-Mustard Chicken Thighs with Roasted Sweet Potatoes is a one-pan meal that's easy to make and packed with flavor. The chicken is juicy and tender, and the sweet potatoes are caramelized and crispy. The whole dish is finished off with a tangy Dijon mustard sauce.
I first came up with this recipe when I was looking for a quick and easy weeknight meal. I had some chicken thighs in the fridge, and I wanted to roast them with some vegetables. I decided to add some Dijon mustard to the chicken for flavor, and the results were amazing. The chicken was so juicy and flavorful, and the sweet potatoes were perfectly caramelized. I've been making this recipe ever since, and it's always a hit with my family and friends.
Prep time: 15 | Cook time: 30 | Serves: 4
Ingredients
1 1/2 pounds boneless, skinless chicken thighs
1 tablespoon olive oil
1 tablespoon Dijon mustard
1/2 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon black pepper
1 pound sweet potatoes, peeled and cut into 1-inch cubes
1 tablespoon chopped fresh parsley
1 tablespoon lemon juice
Instructions
Preheat oven to 400 degrees F (200 degrees C).
In a large bowl, combine the chicken thighs, olive oil, Dijon mustard, thyme, salt, and pepper.
Toss to coat.
Spread the chicken thighs and sweet potatoes in a single layer on a baking sheet.
Roast for 25-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
Remove from the oven and sprinkle with parsley and lemon juice.
Serve immediately.
Why It Works
The Dijon mustard helps to tenderize the chicken and adds a lot of flavor.
Roasting the chicken and sweet potatoes together in one pan saves time and cleanup.
