Ingredients
1 cup watermelon, cut into small cubes
8 ounces halloumi cheese, cut into 1-inch thick slices
1/2 cup olive oil
1 tablespoon lime juice
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chopped fresh mint leaves
lime wedges, for serving
Instructions
Preheat a grill or grill pan over medium heat.
Brush the halloumi slices with olive oil and season with salt and pepper.
Grill the halloumi slices for 2-3 minutes per side, or until golden brown and slightly softened.
While the halloumi is grilling, combine the watermelon, olive oil, lime juice, salt, and pepper in a large bowl.
Toss to combine.
Add the grilled halloumi to the bowl and toss again.
Garnish with mint leaves and serve immediately.
Serve with lime wedges.
