Broccoli and Feta Salad with Toasted Almonds
This broccoli and feta salad is a great way to use up leftover broccoli. It's also a healthy and delicious side dish that can be served warm or cold. The toasted almonds add a nice crunch and the lemon juice and honey add a bit of sweetness and acidity.
I first came up with this recipe when I was trying to figure out what to do with some leftover broccoli. I had already roasted it, but I didn't want to just eat it plain. So I started experimenting with different ingredients and came up with this salad. It's now one of my favorite ways to eat broccoli.

Ingredients
  • 1 head of broccoli, cut into florets
  • 1/2 cup crumbled feta cheese
  • 1/4 cup toasted almonds
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Spread broccoli florets on a baking sheet and drizzle with olive oil.
  3. Roast in preheated oven for 10-12 minutes, or until tender-crisp.
  4. While the broccoli is roasting, toast the almonds in a small skillet over medium heat until golden brown.
  5. In a large bowl, combine the broccoli, feta cheese, toasted almonds, olive oil, lemon juice, honey, salt, and pepper.
  6. Toss to coat.
  7. Serve immediately.
