The inspiration for this salad came to me one day when I was browsing through a farmers market. I saw some beautiful beets and goat cheese, and I knew that I had to create a dish that showcased these ingredients. I started by roasting the beets, which brings out their natural sweetness and intensifies their flavor. Then I added the goat cheese, which adds a creamy richness and a slightly tangy flavor. The candied walnuts provide a touch of sweetness and crunch, and the orange vinaigrette ties all the flavors together. I've served this salad to my friends and family on several occasions, and it's always been a hit. I hope you enjoy it as much as I do!
