Ingredients
  • 1 bunch of kale, chopped
  • 2 Cups Pomegranate seeds
  • 1/2 cup goat cheese
  • 1/2 cup walnuts
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup balsamic vinaigrette
  • 1 Tablespoon olive oil
  • 1 Lemon, juiced and zested
  • Salt and pepper to taste
Instructions
  1. Wash and chop the kale.
  2. In a large bowl, combine the kale, pomegranate seeds, goat cheese, walnuts, and red onion.
  3. Drizzle with balsamic vinaigrette and olive oil.
  4. Season with salt, pepper, lemon juice, and lemon zest.
  5. Toss to combine and serve immediately.
