Fiber-icious Banana and Walnut Pancakes

Ingredients

Instructions
  1. In a medium bowl, combine the oats, almond milk, mashed banana, egg, honey, vanilla extract, baking powder, baking soda, and salt.
  2. Mix until just combined; do not overmix. Fold in the chopped walnuts.
  3. Heat a large nonstick skillet over medium heat. Pour 1/4 cup of batter onto the skillet for each pancake.
  4. Cook for 2-3 minutes per side, or until golden brown.
  5. Serve with your favorite toppings, such as fresh fruit, yogurt, or nuts.
