Ingredients
  • 4 egg whites
  • 1 tablespoon finely chopped onion
  • 1 tablespoon finely chopped bell pepper
  • 1 tablespoon finely chopped tomato
  • 1 tablespoon finely chopped spinach
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon grated Parmesan cheese (optional)
Instructions
  1. Heat the olive oil in a nonstick skillet over medium heat.
  2. Add the onion, bell pepper, tomato, and spinach to the skillet and cook until softened, about 2 minutes.
  3. Push the vegetables to one side of the skillet and pour in the egg whites.
  4. Cook the egg whites until they are set, about 2 minutes, stirring occasionally.
  5. Stir in the salt and pepper.
  6. Sprinkle with Parmesan cheese, if desired.
  7. Serve immediately.
