Fruity Quinoa Bake

Ingredients

  • 1 tablespoon honey or maple syrup
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup plain yogurt or dairy-free alternative
Instructions
  1. Preheat oven to 350°F (175°C).
  2. Rinse the quinoa in a fine-mesh strainer.
  3. In a medium saucepan, combine the quinoa, water or broth, apple, berries, walnuts or pecans, honey or maple syrup, cinnamon, nutmeg, and salt.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the quinoa is cooked through and the liquid has been absorbed.

  6. Pour the quinoa mixture into a greased 8x8 inch baking dish.
