Roasted Garlic and Thyme Dressing
This roasted garlic and thyme dressing is a versatile and flavorful addition to any salad. The roasted garlic gives the dressing a rich, umami flavor, while the thyme adds a fresh, herbaceous note. The dressing is also incredibly easy to make, and can be stored in the refrigerator for up to 2 weeks.
I first came across this dressing at a restaurant in the south of France. I was immediately struck by its complex flavor, and I asked the chef for the recipe. He was kind enough to share it with me, and I've been making it ever since.

Ingredients
  • 1 head of garlic
  • 1/2 cup olive oil
  • 1/4 cup fresh thyme leaves
  • 2 tablespoons lemon juice
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
Instructions
  1. Preheat oven to 400°F (200°C).
  2. Cut the top off the head of garlic and drizzle with olive oil.
  3. Wrap the garlic in foil and roast in the preheated oven for 45 minutes, or until the garlic is soft and golden brown.
  4. Let the garlic cool slightly, then squeeze the roasted garlic cloves out of the skins.
  5. In a blender or food processor, combine the roasted garlic, olive oil, thyme, lemon juice, salt, and pepper.
  6. Blend until smooth and creamy.
  7. Transfer the dressing to a jar or bottle and store in the refrigerator for up to 2 weeks.
