Roasted Red Pepper and Onion Skewers
These skewers are a quick and easy way to get your vegetables in. They're perfect for a summer cookout or a weeknight dinner. The red bell peppers and onions are roasted until they're tender and slightly charred, and the avocado oil and spices give them a delicious flavor.
I first had these skewers at a friend's house a few years ago. I was immediately hooked on their smoky, flavorful goodness. I've been making them ever since, and they've become a staple in my summer grilling repertoire.

  • 1 tablespoon avocado oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt

  • 12 wooden skewers

  2. In a large bowl, combine the red bell pepper, onion, avocado oil, oregano, salt, and black pepper. Toss to coat.
  3. Thread the vegetables onto the skewers, dividing them evenly.
  4. Place the skewers on a baking sheet lined with parchment paper.
  5. Roast for 15-20 minutes, or until the vegetables are tender and slightly charred.
  6. Serve immediately or let cool and store for later.
Why It Works
  • The avocado oil helps the vegetables to roast evenly and prevents them from sticking to the skewers.
  • The oregano, salt, and black pepper add flavor to the vegetables without overpowering them.
  • Roasting the vegetables until they're slightly charred gives them a delicious smoky flavor.
