Ingredients
  • 1 pound asparagus, trimmed
  • 2 tablespoons olive oil
  • 1 lemon, zested and juiced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh chives
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons unsalted butter, softened
Instructions
  1. Preheat a grill or grill pan over medium-high heat.
  2. In a large bowl, combine the asparagus, olive oil, lemon zest and juice, parsley, chives, salt, and pepper. Toss to coat.
  3. Grill the asparagus for 5-7 minutes per side, or until tender-crisp.
  4. In a small bowl, combine the butter and lemon zest. Stir until well blended.
  5. Serve the grilled asparagus immediately, topped with the lemon-herb butter.
