Italian Sausage & Broccolini Sheet Pan Delight
Is there anything more satisfying than a one-pan meal where your protein and vegetables cook together, mingling their flavors and requiring minimal cleanup? We don't think so, especially when the protein in question is spicy Italian sausage, which adds a welcome kick to the tender broccolini and sweet potatoes. This sheet pan delight is a breeze to prepare, making it perfect for weeknight dinners or quick and easy lunches. Plus, it's a great way to use up any leftover vegetables you may have lurking in your fridge.
The inspiration for this recipe came to me one night when I was trying to figure out what to make for dinner. I had some Italian sausage in the fridge that I needed to use up, and I also had some broccolini and sweet potatoes that were starting to look a little sad. I decided to throw everything on a sheet pan and roast it in the oven, and the results were amazing. The sausage was cooked to perfection, the broccolini was tender and slightly charred, and the sweet potatoes were soft and caramelized. I've been making this recipe ever since, and it's always a hit with my family and friends.

Why It Works
  • Roasting the sausage, broccolini, and sweet potatoes together on a sheet pan allows the flavors to mingle and create a delicious, cohesive dish.
  • The high heat of the oven caramelizes the sweet potatoes and gives the broccolini a slightly charred flavor.
  • The avocado oil helps to keep the vegetables from sticking to the pan and also adds a subtle nutty flavor.
  • The oregano, garlic powder, salt, and pepper add a savory flavor to the dish.
