Instructions
  1. In a heatproof bowl set over a saucepan of simmering water, melt the chocolate chips, cocoa powder, and coconut oil together, stirring until smooth.

  3. Let the mixture cool for a few minutes, then stir in the chopped nuts or seeds, if desired.
  4. Pour the mixture into a lined 8x8 inch baking dish and refrigerate for at least 2 hours, or until firm.
  5. Use a sharp knife to cut the mixture into 1-inch truffles.
  6. Roll the truffles in the unsweetened shredded coconut, if desired.
  7. Store the truffles in the refrigerator for up to 2 weeks.
