Chocolate and Raspberry Chia Seed Pudding

Ingredients
  • 1 cup unsweetened almond milk
  • 1/4 cup full-fat coconut milk
  • 1/4 cup cocoa powder
  • 1 tablespoon pure maple syrup
  • 1 tablespoon chia seeds
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • 1/2 cup raspberries, fresh or frozen
  • 2 tablespoons cacao nibs, for garnish (optional)
Instructions
  1. In a medium bowl, whisk together the almond milk, coconut milk, cocoa powder, maple syrup, chia seeds, vanilla extract, cinnamon, and salt.
  2. Cover and refrigerate for at least 4 hours or overnight.
  3. When ready to serve, divide the pudding among four small jars or glasses.
  4. Top with raspberries and cacao nibs, if desired.
