Ingredients
1 cup unsweetened almond milk
1/4 cup full-fat coconut milk
1/4 cup cocoa powder
1 tablespoon pure maple syrup
1 tablespoon chia seeds
1/2 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
Pinch of salt
1/2 cup raspberries, fresh or frozen
2 tablespoons cacao nibs, for garnish (optional)
Instructions
In a medium bowl, whisk together the almond milk, coconut milk, cocoa powder, maple syrup, chia seeds, vanilla extract, cinnamon, and salt.
Cover and refrigerate for at least 4 hours or overnight.
When ready to serve, divide the pudding among four small jars or glasses.
