Ingredients
3 pounds beef or chicken bones (such as marrow bones, knuckle bones, or chicken backs)
1 tablespoon apple cider vinegar
1 onion, quartered
2 carrots, chopped
2 celery stalks, chopped
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon black peppercorns
10 cups filtered water
1 tablespoon sea salt
Instructions
Preheat oven to 425°F (220°C).
Place the bones on a roasting pan and roast in the preheated oven for 30 minutes, or until browned.
Transfer the roasted bones to a large stockpot or slow cooker.
Add the apple cider vinegar, onion, carrots, celery, thyme, oregano, peppercorns, and water to the pot.
Bring to a boil over medium-high heat, then reduce heat to low and simmer for 12-24 hours.
Strain the broth into a clean pot or container. Discard the solids.
Season with sea salt to taste.
Let the broth cool slightly before storing it in the refrigerator or freezer.
