Ingredients
  • 3 pounds beef or chicken bones (such as marrow bones, knuckle bones, or chicken backs)
  • 1 tablespoon apple cider vinegar
  • 1 onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon black peppercorns
  • 10 cups filtered water
  • 1 tablespoon sea salt
Instructions
  1. Preheat oven to 425°F (220°C).
  2. Place the bones on a roasting pan and roast in the preheated oven for 30 minutes, or until browned.
  3. Transfer the roasted bones to a large stockpot or slow cooker.
  4. Add the apple cider vinegar, onion, carrots, celery, thyme, oregano, peppercorns, and water to the pot.
  5. Bring to a boil over medium-high heat, then reduce heat to low and simmer for 12-24 hours.
  6. Strain the broth into a clean pot or container. Discard the solids.
  7. Season with sea salt to taste.
  8. Let the broth cool slightly before storing it in the refrigerator or freezer.
