Coconut Milk Yogurt
This simple and delicious coconut milk yogurt is a great dairy-free alternative for those following the Whole30 diet.

Ingredients
  • 4 cans (13.5 ounces each) full-fat coconut milk
  • 1 tablespoon tapioca flour
  • 1/2 teaspoon agar agar powder
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon vanilla extract
  • 1/8 teaspoon stevia
  • Probiotics (such as 1/2 teaspoon of a Whole30-compliant probiotic powder, 1 capsule of a probiotic supplement, or 1/4 cup of unsweetened coconut yogurt)
  • Glass jars with lids for storing the yogurt
Instructions
  1. In a large saucepan, whisk together the coconut milk, tapioca flour, agar agar powder, sea salt, vanilla extract, and stevia.
  2. Bring the mixture to a boil over medium heat, stirring constantly.
  3. Reduce the heat to low and simmer for 15 minutes, or until the mixture has thickened slightly.
  4. Remove the saucepan from the heat and let it cool for 5 minutes.
  5. Stir in the probiotics.
  6. Pour the mixture into glass jars and cover them tightly.
  7. Place the jars in a warm place (such as a turned-off oven) to culture for 12-24 hours, or until the yogurt has thickened and set.
  8. Once the yogurt has cultured, store it in the refrigerator for at least 4 hours before serving.
  9. Enjoy the yogurt on its own or use it as a topping for fruit, granola, or smoothies.
