This recipe was inspired by a trip to the Mediterranean coast. I was lucky enough to spend a few weeks in Greece, where I ate some of the best seafood of my life. One of my favorite dishes was a simple baked cod with lemon and dill. The fish was so fresh and flavorful, and the lemon and dill added the perfect amount of brightness and acidity. I knew I had to recreate this dish when I got home, and this recipe is the result.
