Loaded Breakfast Nachos: A Whole30 Version of Nachos with Scrambled Eggs, Black Beans, and Salsa
Breakfast nachos are a thing now, and they're awesome. This Whole30 version skips the tortillas and uses crispy sweet potato slices as the base, topped with creamy scrambled eggs, protein-packed black beans, and fresh salsa. It's a hearty and satisfying meal that will keep you energized all morning long.
The inspiration for this recipe came to me one morning when I was craving nachos, but I didn't want to eat anything too heavy or unhealthy. I started experimenting with different ingredients, and eventually came up with this Whole30-friendly version. It's so good, I've been eating it for breakfast almost every day since.

Ingredients
  • 1 large sweet potato, scrubbed and pierced with a fork
  • 1 tablespoon avocado oil
  • 1/4 teaspoon sea salt
  • 6 large eggs
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped onion
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1/2 cup salsa
  • 1/2 avocado, sliced
  • 1/4 cup chopped cilantro leaves
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Scrub the sweet potato clean and pierce the skin with a fork. Bake in the preheated oven until soft, about 60 minutes.
  3. While the sweet potato is baking, heat the avocado oil in a large skillet over medium heat.
  4. Beat the eggs in a bowl and season with salt and pepper.
  5. Pour the eggs into the skillet and cook, stirring constantly, until scrambled.
  6. Remove the sweet potato from the oven and let it cool for a few minutes.
  7. Cut the sweet potato in half lengthwise and scoop out the flesh.
  8. Place the sweet potato flesh on a plate and top with the scrambled eggs, black beans, salsa, avocado, and cilantro.
  9. Serve immediately.
