Ingredients
3 large eggs
1 tablespoon olive oil
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 (15 ounce) can black beans, rinsed and drained
1/2 cup salsa
1/4 cup chopped cilantro
1 whole wheat tortilla
Salt and pepper to taste
Instructions
Heat the olive oil in a large skillet over medium heat.
Add the onion and bell pepper and cook until softened, about 5 minutes.
Add the black beans and salsa and cook until heated through, about 2 minutes.
In a separate bowl, whisk the eggs with salt and pepper.
