Savory Start: Arugula and Smoked Salmon Salad with Poached Eggs
This salad is a light and refreshing way to start your day. The arugula is peppery and slightly bitter, while the smoked salmon is salty and rich. The eggs add a touch of protein and creaminess, and the dressing brings it all together. This salad is perfect for a quick and easy breakfast or lunch.
I first had this salad at a restaurant in New York City. I was immediately hooked on the combination of flavors and textures. I've been making it at home ever since, and it's become one of my favorite go-to recipes. I've experimented with different ingredients and dressings over the years, but I always come back to this classic combination.
