Ingredients
  • 2 medium sweet potatoes, peeled and cubed
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1/2 cup red onion, finely chopped
  • 1/2 cup cilantro, chopped
  • 1/4 cup lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Toss sweet potatoes with olive oil, chili powder, cumin, salt, and pepper.
  3. Spread sweet potatoes in a single layer on a baking sheet.
  4. Roast in preheated oven for 20-25 minutes, or until tender.
  5. While sweet potatoes are roasting, make the dressing. In a small bowl, whisk together lime juice, olive oil, cilantro, salt, and pepper.
  6. In a large bowl, combine sweet potatoes, black beans, red onion, and cilantro.
  7. Pour dressing over salad and toss to coat.
