Tropical Fruit Salad with Coconut and Lime

Ingredients
  • 1 cup fresh pineapple, cut into 1-inch cubes
  • 1 cup fresh mango, cut into 1-inch cubes
  • 1 cup fresh papaya, cut into 1-inch cubes
  • 1 cup fresh kiwi, peeled and cut into 1-inch cubes
  • 1 cup fresh strawberries, hulled and cut in half
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup chopped fresh mint
  • 1/4 cup lime juice
  • 1/4 teaspoon sea salt
Instructions
  1. In a large bowl, combine the pineapple, mango, papaya, kiwi, strawberries, coconut, mint, lime juice, and sea salt.
  2. Toss gently until the fruit is evenly coated.
  3. Serve immediately.
  4. For a chilled salad, refrigerate for at least 30 minutes before serving.
