Watermelon and Feta Salad with Mint and Lime
This watermelon and feta salad is a refreshing and flavorful summer dish that is perfect for a light lunch or dinner. The sweetness of the watermelon pairs perfectly with the saltiness of the feta cheese, and the mint and lime add a bright and herbaceous flavor. This salad is also very easy to make, and can be assembled in just a few minutes.
Watermelon and feta cheese may seem like an unlikely pairing, but trust me, it works. The sweetness of the watermelon perfectly complements the saltiness of the feta, and the combination is surprisingly refreshing. I first tried this salad at a restaurant in Greece, and I've been hooked ever since. I've adapted the recipe over the years to make it my own, and I'm excited to share it with you.
