The inspiration for this recipe came to me during a trip to India many years ago. I was exploring the bustling streets of Mumbai when I came across a small street vendor selling a variety of delicious-looking curries. I ordered a plate of the vegetable curry, and it was so good that I couldn't stop eating it. I asked the vendor what was in the curry, and he told me that it was made with a base of cashew nuts. I was intrigued, so I decided to experiment with making my own cashew-based curry dressing at home. After a few tries, I finally came up with this recipe, and it's been a favorite of mine ever since.

Why It Works
  • The cashews give the dressing a creamy, rich texture.
  • The curry powder adds a warm, exotic flavor.
  • The lemon juice brightens up the dressing and adds a bit of acidity.
  • The nutritional yeast adds a cheesy flavor and makes the dressing more nutritious.
  • The spices (garlic powder, onion powder, and cayenne pepper) add depth and complexity to the flavor.
