Ingredients
  • 1 whole chicken (about 3-4 pounds)
  • 1 tablespoon olive oil
  • 1 lemon, zested and juiced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon salt, or to taste
  • 1 cup chicken broth
  • 1/4 cup chopped fresh parsley
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Rinse the chicken inside and out and pat dry.
  3. In a small bowl, combine the olive oil, lemon zest, lemon juice, garlic, thyme, rosemary, black pepper, and salt. Rub the mixture all over the chicken.
  4. Place the chicken in a roasting pan and pour the chicken broth around it.
  5. Roast the chicken for 1 hour and 15 minutes, or until the internal temperature reaches 165 degrees F (74 degrees C).
  6. Let the chicken rest for 10 minutes before carving.
  7. Serve the chicken with the pan juices and garnish with parsley.
