Stir-fried Brussels Sprouts with Sriracha

Once upon a time, in a land far, far away (okay, it was just last week in my kitchen), I was faced with a bag of sad, neglected Brussels sprouts. I'm not sure how they got there—maybe they snuck into my cart at the grocery store, or perhaps they were part of a CSA share that I'd forgotten about. Either way, I knew I had to do something with them, and fast.

Ingredients
  • 1 pound Brussels sprouts, trimmed and halved
  • 1 tablespoon olive oil
  • 1/4 cup chopped onion
  • 1/4 cup chopped red bell pepper
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup Sriracha sauce
  • 1 tablespoon chopped fresh cilantro
Instructions
  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the Brussels sprouts, onion, and red bell pepper to the skillet and cook, stirring occasionally, until the vegetables are tender, about 5 minutes.
  3. Add the garlic, salt, and pepper to the skillet and cook for 1 minute more.
  4. Stir in the Sriracha sauce and cook for 1 minute more, or until the vegetables are evenly coated.
  5. Sprinkle with cilantro and serve.
