Roasted Red Cabbage and Apple Salad with Walnuts and Goat Cheese
This colorful, flavorful salad is the perfect way to brighten up your winter table. The roasted red cabbage is slightly sweet and tangy, and the apples add a touch of sweetness and crunch. The walnuts and goat cheese add a touch of richness and creaminess, and the fresh parsley brightens up the flavors. This salad is easy to make and can be served as a side dish or a main course. It's also a great way to use up leftover roasted cabbage.
I've always loved roasted cabbage, but I never thought to pair it with apples until I stumbled upon this recipe in an old cookbook. The combination of the sweet and tangy cabbage with the crisp, juicy apples was irresistible. I've been making this salad ever since, and it's always a hit with my friends and family. I've even started experimenting with different variations, such as adding dried cranberries or toasted pecans. But the original recipe is still my favorite, and it's the one I'm sharing with you today.

Why It Works
  • Roasting the cabbage brings out its natural sweetness and caramelizes the edges, giving it a slightly smoky flavor.
  • Adding apples to the salad provides a touch of sweetness and crunch, and they help to balance out the tangy flavor of the cabbage.
  • The walnuts add a touch of richness and crunch, and the goat cheese adds a touch of creaminess.
  • The fresh parsley brightens up the flavors and adds a touch of color to the salad.
