Ingredients
  • 1 cup quinoa, rinsed and drained
  • 1.5 cups water
  • 1/2 cup unsweetened coconut milk
  • 1/4 cup chia seeds
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup chopped tropical fruit (such as mango, pineapple, banana, and papaya)
  • 1/2 cup shredded unsweetened coconut
  • 1 tablespoon chopped mint, for garnish
Instructions
  1. Combine the quinoa, water, coconut milk, chia seeds, honey, and vanilla extract in a medium saucepan.
  2. Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 15 minutes, or until the quinoa is tender and the chia seeds have absorbed the liquid.
  3. Remove from heat and let stand, covered, for 5 minutes.
  4. Divide the quinoa mixture among four bowls.
  5. Top with the tropical fruit, shredded coconut, and mint.
  6. Serve immediately and enjoy!
  7. For a chilled version, prepare the quinoa mixture a day ahead and refrigerate overnight. Assemble the bowls just before serving, using chilled quinoa and cold tropical fruit.
