Ingredients
  • 1 tablespoon extra virgin olive oil
  • 1 cup chopped yellow onion
  • 1/2 pound cremini mushrooms, sliced
  • 1/2 cup chopped sun-dried tomatoes
  • 1 cup Carnaroli or Arborio rice
  • 1/2 cup dry white wine
  • 4 cups vegetable broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped fresh spinach
  • Salt and freshly ground black pepper to taste
Instructions
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and cook until softened about 5 minutes.
  3. Add the mushrooms and cook until they are browned, about 5 minutes more.
  4. Add the sun-dried tomatoes, rice, and white wine. Cook, stirring frequently, until the wine has been absorbed, about 2 minutes.
  5. Add 2 cups of the vegetable broth and bring to a simmer. Cook, stirring occasionally, until the rice is tender and creamy, about 18 minutes.
  6. If the risotto becomes too dry, add more vegetable broth as needed.
  7. Once the rice is cooked, stir in the Parmesan cheese, spinach, and salt and pepper to taste.
