Ingredients
  • 1 cup almond flour
  • 1/2 cup powdered erythritol
  • 1/4 cup melted butter

  • 1/2 cup pistachio nuts, chopped
  • 1/4 cup heavy cream
  • 1/4 teaspoon almond extract
  • 1/4 teaspoon stevia extract
Instructions
  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, combine the almond flour, powdered erythritol, melted butter, and vanilla extract. Press the mixture into a 9-inch tart pan with removable bottom. Bake for 10-12 minutes, or until the crust is golden brown.
  3. While the crust is baking, make the filling. In a small bowl, combine the raspberries, pistachio nuts, heavy cream, almond extract, and stevia extract. Stir until well combined.
  4. Pour the filling into the cooled crust. Refrigerate for at least 2 hours before serving.
