Baked Pear and Almond Tarts

Instructions
  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, combine the almond flour, coconut oil, maple syrup, vanilla extract, and salt. Press into the bottom of six 4-inch tart pans.
  3. In a separate bowl, toss the pears with the lemon juice.
  4. Arrange the pear slices on top of the almond crust in the tart pans.
  5. Bake for 25-30 minutes, or until the crust is golden brown and the pears are tender.
  6. Let cool for a few minutes before drizzling with honey and sprinkling with chopped walnuts, if desired.
