I've always been a fan of coconut and almond cookies, but I've never been able to find a keto-friendly recipe that I love. Most of the recipes I've tried have been either too dry or too crumbly. But these cookies are different. They're soft and chewy, with a slight crunch from the coconut flakes. And they're low in carbs and sugar, making them a perfect snack or dessert for people on the keto diet.

Why It Works
  • The almond flour gives the cookies a soft and chewy texture.
  • The coconut flakes add a slight crunch and a nutty flavor.
  • The erythritol is a sugar-free sweetener that doesn't raise blood sugar levels.
  • The baking soda and salt help the cookies to rise and brown.
  • The egg and melted butter add moisture and richness.
