Ingredients
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 1/2 cup sugar-free lemon curd
  • 1/2 cup non-fat cream cheese, softened
  • 1/2 cup Greek yogurt, plain
  • 1/2 cup erythritol or your favorite sugar substitute
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • Lemon slices for garnish (optional)
Instructions
  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press into the bottom of an 8-inch square baking dish.
  3. Bake for 10-12 minutes, or until golden brown. Let it cool completely.
  4. In a large bowl, beat cream cheese until smooth.
