Ingredients
  • 1 pound cod fillets
  • 1 tablespoon olive oil
  • 1/4 cup lemon juice
  • 2 tablespoons capers
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup quinoa
  • 2 cups water
  • 1/4 cup chopped fresh parsley
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Place the cod fillets in a baking dish.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Bake for 15-20 minutes, or until the fish is cooked through.
  5. While the fish is cooking, prepare the quinoa.
  6. Rinse the quinoa in a fine-mesh sieve.
  7. Bring the water to a boil in a medium saucepan.
  8. Add the quinoa and reduce heat to low.
  9. Cover and simmer for 15 minutes, or until the quinoa is cooked through.
  10. Fluff the quinoa with a fork and stir in the parsley.
