Ingredients
  • 2 ripe avocados
  • 1 cup cooked quinoa
  • 1/2 cup cooked black beans
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Optional: crumbled queso fresco or feta cheese
Instructions
  1. Preheat oven to 400°F (200°C).
  2. Cut the avocados in half, remove the pits, and scoop out some of the flesh to make a cavity.
  3. Mash the avocado flesh with a fork and set aside.
  4. In a bowl, combine the quinoa, black beans, red onion, cilantro, lime juice, chili powder, cumin, salt, and pepper.
  5. Spoon the quinoa mixture into the avocado halves.
  6. Bake for 15-20 minutes, or until the avocados are heated through.
