Ingredients
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg
  • 1/2 cup unsweetened almond milk
  • 1 tablespoon melted butter
  • 2 tablespoons xylitol or erythritol
  • 1 teaspoon vanilla extract
Instructions
  1. In a large bowl, combine the almond flour, coconut flour, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk the egg, almond milk, melted butter, xylitol or erythritol, and vanilla extract.
  3. Add the wet ingredients to the dry ingredients and whisk until just combined.
  4. Heat a lightly greased skillet over medium heat.
  5. Pour 1/4 cup of batter onto the skillet for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown.
  7. Serve immediately with your favorite toppings, such as butter and syrup.
