Ingredients
- 1 ripe banana
- 1/2 cup unsweetened almond butter
- 1/4 cup coconut oil, melted
- 1/4 cup honey
- 2 eggs
- 1/2 cup almond flour
- 1/4 cup coconut flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Grease or line a muffin pan with paper liners.
- In a large bowl, mash the banana until smooth.
- Stir in the almond butter, coconut oil, honey, and eggs until well blended.
- In a separate bowl, whisk together the almond flour, coconut flour, baking soda, cinnamon, and salt.
- Add the dry ingredients to the wet ingredients and stir until just combined.
- Divide the batter among the prepared muffin cups.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
