Ingredients
  • 1 ripe banana
  • 1/2 cup unsweetened almond butter
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey
  • 2 eggs
  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C). Grease or line a muffin pan with paper liners.
  2. In a large bowl, mash the banana until smooth.
  3. Stir in the almond butter, coconut oil, honey, and eggs until well blended.
  4. In a separate bowl, whisk together the almond flour, coconut flour, baking soda, cinnamon, and salt.
  5. Add the dry ingredients to the wet ingredients and stir until just combined.
  6. Divide the batter among the prepared muffin cups.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
