Ingredients
  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed

  • 4 cups chicken broth
  • 1 large bunch kale, chopped

  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions
  1. Heat the olive oil over medium heat in a large pot. Add the sausage and cook until browned.
  2. Add the onion and garlic to the pot and cook until softened.
  3. Add the chicken broth and kale to the pot and bring to a boil. Simmer for 15 minutes, or until the kale is tender.
  4. Stir in the heavy cream, Parmesan cheese, salt, pepper, and crushed red pepper flakes. Simmer for an additional 5 minutes, or until the soup is heated through.
  5. Serve immediately.
