Zesty Lemon and Lime Curd with Fresh Berries
This bright and tangy lemon and lime curd, illustrated in the photo above, will compliment any number of desserts, or it can be used as a standalone treat. It's made with just a few simple ingredients and can be whipped up in a matter of minutes.
The combination of lemon and lime is simply stunning. The lemon is the star of the show, while the lime adds just enough complexity and interest to make this curd truly special.
I've always been a fan of lemon curd, but I've never been a fan of how it's traditionally made. I find that most lemon curd recipes are too thick and gluey, and they often have a strange, grainy texture.
I decided to come up with my own lemon curd recipe that would be smooth, creamy, and zesty, and, of course, not overly sweet. After a few experiments, I finally hit upon the perfect combination of ingredients and cooking techniques.
My lemon and lime curd is made with just a few simple ingredients: lemon juice, lime juice, sugar, butter,蛋黄, lemon zest, lime zest, and a pinch of salt. The key to making a smooth, creamy curd is to cook it over medium heat, stirring constantly, until it has thickened but before it boils. Boiling the curd will cause it to curdle and become grainy.
Once the curd has thickened, remove it from the heat and let it cool slightly before pouring it into a jar or container. Refrigerate the curd for at least 2 hours before serving.
I like to serve my lemon and lime curd with fresh berries. The sweetness of the berries complements the tartness of the curd perfectly.
Prep time: 10 | Cook time: 5 | Serves: 4
Ingredients
1/2 cup fresh lemon juice
1/2 cup fresh lime juice
1 cup sugar
1/2 cup unsalted butter, cut into small pieces
3 large egg yolks
1 tablespoon lemon zest
1 tablespoon lime zest
Pinch of salt
Fresh berries, for serving
Instructions
Whisk together the lemon juice, lime juice, sugar, butter, egg yolks, lemon zest, lime zest, and salt in a medium saucepan.
Cook over medium heat, stirring constantly, until the mixture has thickened and coats the back of a spoon, about 5 minutes.
Remove from the heat and let cool slightly.
Pour the curd into a jar or container and refrigerate for at least 2 hours before serving.
Serve the curd with fresh berries.
Why It Works
The combination of lemon and lime is classic for a reason: the flavors complement each other perfectly.
Cooking the curd over medium heat, stirring constantly, prevents it from curdling and becoming grainy.
Letting the curd cool slightly before refrigerating it helps to prevent it from separating.
