Ingredients
  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup chopped walnuts
  • 1/4 cup honey
  • 1 tablespoon coconut oil, melted
  • 1/2 cup dried apricots, chopped
  • 1/4 cup orange juice
  • 1 tablespoon lemon juice
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Grease a 9-inch square baking pan.
  3. In a medium bowl, combine the coconut flakes, walnuts, honey, and melted coconut oil. Press into the bottom of the prepared pan.
  4. In a small bowl, combine the apricots, orange juice, lemon juice, cinnamon, and salt. Pour over the coconut crust.
  5. Bake for 20-25 minutes, or until the apricots are soft and the crust is golden brown.
  6. Let cool completely before cutting into squares.
