Ingredients
  • 1 tablespoon extra virgin olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 head cauliflower, chopped
  • 4 cups vegetable broth
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1/2 cup shredded cheddar cheese (optional, for non-vegans)
  • 1/4 cup chopped fresh parsley
Instructions
  1. In a large pot over medium heat, heat the olive oil.
  2. Add the onion and cook until softened, about 5 minutes.
  3. Add the garlic and cook for 1 minute more.
  4. Add the cauliflower, vegetable broth, black pepper, and salt. Bring to a boil, then reduce heat and simmer for 10 minutes, or until the cauliflower is tender.
