Ingredients
  • 1 cup (240ml) hummus
  • 1/2 cup (120ml) olive oil
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 zucchini, cut into 1-inch pieces
  • 1 small onion, thinly sliced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 whole wheat pita breads
  • Fresh parsley, for garnish
Instructions
  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine the red bell pepper, zucchini, onion, olive oil, oregano, salt, and pepper. Toss to coat.
  3. Spread the vegetables in an even layer on a baking sheet.
  4. Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly browned.
  5. While the vegetables are roasting, heat the hummus in a microwave-safe bowl for 1-2 minutes, or until warmed through.
  6. To assemble the platter, spread the warmed hummus on a serving plate.
  7. Arrange the roasted vegetables on top of the hummus.
  8. Cut the pita bread into wedges and place them around the hummus and vegetables.
  9. Garnish with fresh parsley.
  10. Serve immediately.
